They are slightly spicy with the addition of extra ginger and have the subtle sweet tang from the lemon frosting.
Gingerbread Men (gluten free & vegan)
Ingredients:
1/2 cup vegan butter
2 1/2 cup homemade gluten free flour
1/2 cup vegan sugar
1/2 cup + 2 tablespoons molasses
1 flaxseed meal egg (1 Tb flaxseed meal + 2 Tbs warm
water, allow to sit for 5 minutes to thicken)
1 tsp baking soda
2 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp ground cloves
In a
large bowl, beat vegan butter with an electric mixer on medium to high speed
about 30 seconds or till softened. Add sugar, molasses, flax-egg, baking soda,
ginger, cinnamon, and cloves. Mix well.
Add your
GF flour
Divide
dough in half. Cover and chill about 2 hours or till easy to handle.
Preheat
oven to 350 degrees.
On a
lightly floured surface, roll each half of dough in to 1/4 inch
thickness.
Using a cookie cutter of your choice, cut dough into shapes.
Place
on cookie sheet that has been covered in parchment paper.
Bake
for 10 to 12 minutes or till edges are firm. Cool on cookie
sheet for 1 minute. Transfer cookies to a wire rack.
