Gluten Free Irish Shortbread

Simple Irish Shortbread 

(Gluten Free, Vegan)


Shortbread has to be one of the best things to have in the house for a sweet treat. My husband loves to grab a few of these shortbread cookies with a cup of tea on a cold fall afternoon…or in the morning as he's running out the door….or before he goes for a run….come to think of it, anytime at all. They are gluten free and vegan which pleases my crazy family as well.

These little cookies are easy to make and taste amazingly decadent! Be sure you have a cool pan to press them into. As they are gluten free they need a little help to stay pretty. The fun comes when you get to add your own flavor to the mix. I tried orange zest & cranberries and lemon zest. Try something new!


Simple Irish Shortbread 


1 cup Earth Balance
1/2 cup icing sugar
1 cup rice flour
1/2 cup corn starch
1/2 cup tapioca flour
1/2 tsp Xanthan Gum
1 tsp extract

Options:
2 tsp lemon zest 
or
1 tsp orange zest + cranberry 
or 
1tsp vanilla paste
or 
1tbs pumpkin pie spice

First cream earth balance and icing sugar until very smooth. Next, add other ingredients slowly while
mixing. Press with your hands into a pan. Keep in mind that how thick the cookies are in the pan is
how thick they will be when you pull them out. Bake for 30-40 minutes on 300 degrees.
